1 bunch callaloo fresh, chopped
3 cups water
1/4 to 1/2 Lb saltfish ( codfish )
1 lg. onion, finely chopped
1 scotch bonnet to taste
¼ cup vegetable oil
salt and pepper to taste
1. In a heavy pot with cover, heat oil and add callaloo
and season and water.
2. Simmer until tender.
3. Add flaked Saltfish ( Codfish ), Cook for 5 to 7 minutes more
