2 cups flour
1 tbsp. salt
2 tbsp. baking powder
2 tbsp. bicarbonate of soda
2 tbsp. cinnamon powder
2 cups granulated sugar
3 eggs
1 1/3 cups corn oil
1 cup crushed canned pineapple
2 cups grated carrot
1 cup grated coconut
1/2 cup raisins
1/2 cup chopped nuts
Cooking Directions
Sift the first five ingredient into a bowl. stir in sugar. Stir in all the remaining ingredients, to give a dropping consistency. Divide mixture between two lined 8 inch square pans 3 inches deep. bake on the centre shelf at 350° F for 45 minutes. Remove from the tin and cool. Before serving, Sandwich and cover the cake with the following icing.
Icing
8 oz cream cheese
2 oz butter
4 cups sifted icing sugar
1 Tb Sp vanilla essence
1 Tb Sp lime juice
Beat the cream cheese until it is smooth. Stir in the other ingredients. Beat well.
