1. Break the coconut and remove the hard outer shell.
2. Cut the coconut flesh into 1/4 x 1/4 inch pieces.
3. Place water, coconut and ginger in a thick pan with about 1/2 sugar
4. Boil until about 2/3 water is gone.
5. add remaining sugar and boil until the is sugar sticky ( the mixture should stick to the spoon and dry with 30 to 60 seconds when remove from pot)
6. Stir mixture with a large spoon frequently so that it does not stick pot bottom or burn.
7. Place banana leave on a flat surface ( grease paper or aluminum foil can be use if banana leave is not available.
8. Using the large spoon, scoop and
heap mixture on banana leave ( each heap should be about a spoon full of the large spoon and place separate).
9. Allow to cool
