Sift the first four ingredients. Add the cornmeal and
sugar.
Add the rose water and vanilla to the water. Add the water
to the dry ingredients, binding to form a soft dough.
Knead
lightly. Leave, covered, for 30 minutes. Divide the dough
into eight portions. Flour hands. Knead lightly, and then
roll
and pull each portion to form a 6 in. x 1 1/2 in. length,
about l/8 in. thick.
Dip the Festival in flour and cornmeal mixture then fry
in plenty of hot oil until golden brown. Pierce with a
fork
whilst turning. Serve hot.
If serving the Festival with fried fish, fry the
Festival after the fish, in the same oil. Makes 8 Festivals.
