2 cup diced coconut
1 tbsp. grated root ginger
21/2 cups brown sugar
Cooking Directions
Place coconut in a thick bottomed pan. just cover with water. Simmer until coconut softens ( 30 minutes to 2 hours depending on the age of te coconut) Add more water if necessary. Gradually add sugar, Stirring The mixture will form a hard ball if tested with a spoon. Drop the mixture on grease paper, foil paper or Banana leaves . Leave to set
