Add peas and salt to 1 Quart boiling water in a 2-quart pot cook until soft
Add the coconut milk, thyme, scallion and a scotch bonnet pepper to the cook peas and let this combination boil for about 10 minutes (also if Necessary Additional boiling water depending and the amount of rice you are cooking)
Add the rice to the ingredients and stir, using a fork.
After the pot is boiling, reduce to a low heat.
Simmer until rice is cooked
