2 cups counter flour
11/2 Tb Sp baking powder
1/2 Tp Sp salt
1/2 oz shortening
about 3/4 cup water
Cooking Directions
Sift dry ingredients. Rub in shortening. Add water. Form into a dough. set aside for 30 minutes. Roll into balls 2 inches in diameter. Roll and pull each ball out to form a circle 8 inches in diameter. Brown the roti first on one side then the other on a hot, oiled grddle, pressing down on roti from time to time. Serve hot as an accompaniment for curried dishes or fill with a savoury mixture and serve as a snack.
