This Jamaican
seasoned rice dish can complement a complete meal or can
be eaten alone. The pumpkin gives this dish it's bright
yellow color.
Ingredient
2 cups uncooked white rice
1/2 lb diced pumpkin
2 tsp. vegetable oil
1 tbsp. onion, chopped up
1/2 lb desalted cod fish
2 - 3 cups water
3/4 cup coconut milk
a dash of salt to taste
a sprinkle of thyme
1 stalk scallion, chopped
2 -3 tbsp butter or margarine
1 Scotch Bonnet pepper
1. In a medium saucepan on medium heat, saute onions
and cod in oil until onions are fairly limp and translucent.
2. Add all ingredients, except rice.
3. Continue cooking until pumpkin is fully cooked.
4. Add rice and steam for 25 more minutes.
5. Serves 4 -6 people.
No party is ever complete without the traditional Mannish
Water boiled to perfection in your favorite zinc pan,
well maybe a large pot will do too. This festive vegetable
laden soup is also the soup of choice at most ninth night,
a ceremonial burial traditional.
In addition to using freshly cutup goat's head, goat's
tripe and goat's feet can also be added to this rich brew.
