Tamarind Drink
Ingredient

1 quart ripe unshelled tamarind
5 cup cold water
2 tsp. lime juice
1/2 tsp. grated fresh ginger root
1/2 cup brown sugar
Tarmarind

Cooking Directions

1. Shell tamarind and remove veins. Soak in 5 cup cold water, until soft.
2. Rub through a sieve to get pulp off, using the water in which the tamarind was soaked.
3. Add lime juice, grated ginger root and sugar to sweeten. Strain.

Method Note:
To Serve: For a plain drink chill and serve, for a bubbly foamy drink add about 1/4 teaspoon bicarbonate of soda and serve.
